Mostly Homemade Chicken Soup for One-MY Way

First here is a cookbook with 50 recipes for chicken soup--gosh there are certainly a lot of ways to make this!



Now for how I make it for single me so there are no leftovers. I'm pretty famous for not eating leftovers so I try to make just enough of anything for one meal.



I start with a can of Swanson Natural Goodness Chicken Broth 33 Percent Less Sodium

Meanwhile I take 1/4 cup of dried veggie mix I have and add it and 1/2 cup of boiling water to rehydrate to a small bowl. I do cover it and let it stand for an hour or so.

One chicken breast, defrosted and cleaned. I cut it into bite size pieces and put aside.

That is the basic recipe--I put everything in a pot (including the liquid from the veggie mix) and let it simmer. When the Chicken is cooked through I may or may not add one of the following: A handful of noodles, a handful of spaghetti or a hand full of rice depending on my mood.

I turn up the heat and let it all boil until the pasta is done----

I eat it all up--a balanced meal that will satisfy you as it does me!!
