When I think of my favorite Passover dish it is definitely Matoh Brei--essencially fried matzoh. Very easy to make and very filling. There are lots of different ways to make it--this is how I do it.

Since I am single I generally start with 1 or 1/2 matzoh slices. I break them in to pieces and put in a bowl. I pour a bit of boiling hot water over them to start the softening. Then I add a beaten egg or two and allow that to soak into the matzoh. In a fry pan place butter and melt. Add the soaked matzoh and allow to fry up! I generally add cinnamon and sugar after I have plated it--but sometimes I add a dollop or two of a fruit jam.

That is all there is to it--Eat and enjoy!!
