Avocado and Tuna Salad-the Perfect Lunch

Now I know I have mentioned innumerable times that as a single I really can't buy fresh veggies because they always seem to go bad before I can eat it all up--especially lettuce--even if I buy it in a bag. Very frustrating! What drives me even crazier is I can very rarely if ever find fresh fruit that is ripe. The peaches are hard, the nectarines are hard--even the kiwis are hard. Occasionally the apricots are ready to eat-if I can find them. Apricots have been scarce this year for some reason. My problem lies in the fact that I usually want a piece now. I don't want to wait a couple of days until it ripens. Which gets me to the point of this short piece. I finally found a RIPE. READY to CONSUME AVOCADO!!!!! And to my utter surprise it was not one of the Hass Avocado's. I spotted a LARGE Avocado from Florida--and it was slightly soft--perfect to make the really simple but delicious lunch I have been craving all summer----

I found a site that will explain the difference--all quite interesting--but since I want to use it to stuff-I'll stick to the Florida Avocado's--they are larger!!

About 30 years ago I ate lunch at a little restaurant near where I worked at the time. I fell in love with the dish. I really don't remember all the ingredients-just the main ones: 1/2 of a large avocado filled with a crab salad. Now minced or shredded crab is pretty expensive and money is tight. I happened to have some store made tuna salad which needs to be used pretty quickly---Actually I'm sure any kind of fish or seafood salad would be just as good. When looking for the pic I used above I was surprised at all the fillings you could use. To see them all simply Google pic of avocado filled with salad.

I sliced the avocado in half lengthwise-and discarded the pit which left a nice big empty spot which I filled with some of the tuna salad--I sat down and proceeded to devour it--all of it. I was even able to scrape all of that delicious Avocado right down to the hard outer skin!! HEAVEN-----

I'm almost tempted to eat the second half for breakfast. I have it wrapped and refrigerated but unfortunately do not have any lemon to sprinkle over it. After all the time it took to find it (all summer)--I sure am bound and determined to eat it all.

From now on I look for Florida Avocados!!!!

Fruit goes super fast in our house, but I have the same problem with the lettuce. It always goes bad before we finish it. This sounds tasty and so heart healthy!

I have the very same problem with fresh fruits and veggie's. I can't eat them fast enough. Being diabetic means I should eat a fair portion of my daily intake of them so then I have waste which I cannot afford. The only option I have came up with means eating the same fruit or veggie for 2 or 3 days in a row.

That looks so healthy and tasty, fruit and veg seem to be ok in the UK for keeping except things like grapes, blackberries that sort of thing x
