I was once shopping for a tea kettle which one of my friends needed. A very friendly and helpful salesperson told us that copper was the best bet for any pot, pan, kettle etc. as it keeps the heat evenly throughout. I have to concur--I have been using a small copper bottomed pot to heat water for coffee or tea for a very long time. IMO it even heats up faster! Come to think of it--I need a new little pot---mine still works but the handle, after 10 years of constant use, is becoming a bit loose. I am really going to have to check out Copper Chef to see if they have a small pot!!   6. I hear there are so many things you can make in these pans, but something ooey gooey would be perfect to test it out on ... then go on to frying so I can do my own fries or onion rings!
