I was once shopping for a tea kettle which one of my friends needed. A very friendly and helpful salesperson told us that copper was the best bet for any pot, pan, kettle etc. as it keeps the heat evenly throughout. I have to concur--I have been using a small copper bottomed pot to heat water for coffee or tea for a very long time. IMO it even heats up faster! Come to think of it--I need a new little pot---mine still works but the handle, after 10 years of constant use, is becoming a bit loose. I am really going to have to check out Copper Chef to see if they have a small pot!!
