If I had a $1000 I would pay a couple of bills and use the rest for a family vacation to the beach.

I would probably put it into a high interest fund, to gain some interest and use it to supplement the kids' savings accounts. I might also use some of it to find a nice, but inexpensive, rug for our living room.
